I've found something that works for me, and has changed my life! These super foods have given me the energy to keep up with my toddler and infant!

Oven Baked Fajitas with Wildtree

Easy!
Julian peppers (I used a red, green, yellow and orange)
Julian an onion
2-3 chicken break
Spray pan with olive oil.
Lay out all the vegetables and chicken.
Cover with 2-3 tablespoons Wildtree Fajita Seasoning (amazing, I can hook you up if you need any)
Cover with some olive oil.
Stir up to coat all the vegetables and chicken.
Sprinkle with salt and pepper.

Bakes in the oven for 20 minutes at 400 degrees.
Make sure the chicken is all cooked through.

Serve over corn or flour tortillas!
I bake my corn tortillas in the oven to get them crispy.
I wet some paper towels, cover some corn tortillas, microwave for 1 minute. After that I put them in the oven for 5 minutes, depending on how crispy I want them!

This has become one of my most favorite recipes!

My Brother-in-law Jason

Pretzel Encrusted Chicken Nuggets



A simple meal that is delicious & healthy!

 

Ingredients:

• 2 Eggs
• Pretzel Crisps (really you could use any flavor or any type of pretzel).
• 1 package of chicken breasts
• 1 Garlic Clove, minced
• Salt to taste
• Pepper to Taste

Instructions:

• Cut the chicken breasts into bite size pieces.
• Pre-Heat the oven to 350 degrees
• Beat the 2 eggs.
• Crush a couple handfuls of pretzels (you can crush them any way you desire)
• Dip each piece of chicken into the egg and then into the crushes pretzels.
• Take the dipped pieces of chicken and put onto a wax paper covered baking pan.
• Bake for 30 minutes, or until cooked fully.
• Enjoy!

These are something your spouse and even kids would enjoy! You can serve with ranch, ketchup, chili sauce, and the list could go on. They taste just as good without any dipping sauce also!

You could also make these for an appetizer dish!

Five on Friday

{ONE}

Today, my baby is 7 months old.

 

{TWO}

Tuesday I started the workout videos for 21 Day Fix EXTREME, and I am SORE! I knew I was out of shape, but man, I am out of shape. I am only 3 days in, and I am down about 2lbs. I am making myself eat better. Trying not to do sweets. I want to be down 10 pounds, and in shape before January. I CAN DO IT!

I did not buy any of the Shakeology, has anyone has good results with the Shakeology? It is expensive.

 

{THREE}

I am a sucker for Old Navy Sales. My go to pair of skinny jeans just got a hole in the knee, yes I wore them that much. You know when you find a pair of jeans that fit, its hard not to wear them daily.

One Two Three 

 So, I decided to try these Rockstar Skinny's from Old Navy. My sister loves them. Yes, I purchased all 3.

{Four}
Josh and I will be going to San Diego in January, and it will be right around my 30th Birthday. We are going with some of his co-workers, and we are signed up to go to the San Diego Zoo and get a tour of the USS Midway.
I love WINE and want to go to a winery to celebrate my birthday, so I've been looking some up. I found this one, La Jolla Wine Tours, but if anyone has any suggestions on a different one, please let me know.

I've also looked into doing a Pedal Pub Tour with everyone.
